The breakfast institutions

Maureen's Kitchen in Smithtown is the one the whole Island knows — a weekend line that wraps the building and pancakes the size of hubcaps. Thomas's Ham & Eggery in Carle Place has flipped eggs on Voice Road for more than 70 years and turns tables faster than anywhere in Nassau. Get there early, come hungry, bring cash. The roadside classics

Modern Snack Bar in Aquebogue has served North Fork comfort food — roast turkey, mashed turnip, warm rolls — since 1950, unchanged for three generations. The All American drive-in in Massapequa has griddled the same thin, crispy-edged burger since 1963: order at the window, eat on the hood of your car.

The late-night booths

For eggs and coffee at any hour, the big classic diners deliver: Colombo's and Athena in Middle Island, the Golden Reef on Hempstead Turnpike in Levittown, and the Seaford Palace on Merrick Road. Enormous menus, endless coffee refills, and a booth waiting whenever you turn up.
